One of my favorite easy dishes is Asian coleslaw. I always have to double the recipe because I can go through it pretty quickly. There are lot of variations on this recipe and some people also add chicken but I like it pretty simple. I made it for a quick dinner this weekend.
One pkg of coleslaw
One package of beef or chicken ramen noodles (broke into pieces and the dry mix)
Half of package of slivered almonds
Chopped scallions (optional)
Salt & pepper to taste
3 Tablespoons of EVOO
1/2 cup of rice vinegar
Toss everything together and voila!
