I spent the weekend in Woodstock, NY and we cooked a good amount. One night we made steaks with a pepper rub and a peppercorn sauce. We broiled the steak which cooked it super fast and it turned out great. The stovetop was acting a bit funky so broiling was the method of the weekend. We made a great salad as well with greens, beets, avocado, tomatoes and goat cheese. The second night we broiled some salmon fillets with lemon, butter and dill. We still had some leftover salad from the previous night so we accompanied that with the salmon as well as some roasted carrots. Both nights everything tasted so fresh and delicious. On Sunday, we made a big (although less interesting) meal of scrambled eggs, chicken/apple sausage, bacon and toast.
